Recipe of the Month: Baked Parmesan Fish

Servings: 4
Time: 15 minutes prep, 30 minutes cook
Ingredients
4 fish fillets
1 small package of Ritz crackers, crushed
1/3 cup olive oil
1 cup parmesan cheese
2 Tbsp. chopped parsley
Lemon pepper to taste
Butter flavor cooking spray
Directions
Spray baking dish with cooking spray and place fillets in dish.
Spray the tops of the fillets and sprinkle with lemon pepper.
In a bowl, mix cracker crumbs, parmesan cheese and parsley.
Pour oil over crumbs and mix until moistened. Top each fillet with crumbs.
Bake at 350° F for 25 to 30 minutes.
